Peanut an honey energy bars (no bake energy bars)

Peanut and honey energy bars are perfect for an energy boost when out and about whilst on a long walk or cycle ride. They are jam packed with flavour and energy and will take up very little room in your bag. These no bake energy bars are quick and easy to make - simply chop, combine, chill, pop in your bag and eat!

Ingredients

  • 300g peanuts (salted or unsalted)
  • 40 dried dates (with stones removed)
  • 100g chopped dried apricots
  • 6 dessertspoons pumpkin seeds
  • Approximately 8 dessertspoons honey

Equipment needed to make peanut and honey energy bars

  • Large bowl
  • Chopping board
  • Sharp knife
  • Food processor
  • Large spoon
  • Dessert spoon
  • 24cm by 15 cm baking tin
  • Non stick baking parchment or foil

How to make peanut and honey energy bars

Chop the peanuts in a food processor. Remove the stones from the dates and chop into small pieces.

Place the chopped peanuts, chopped dates and chopped dried apricots in a bowl. Add the pumpkin seeds and mix until even.

Add the honey to the other ingredients and mix until combined. You might need to adjust the amount of honey depending on how moist or dry the other ingredients are.

Line a 24 cm by 15 cm (or equivalent) tin with non stick baking parchment or foil. Place the mixture into the lined tin and press firmly with the back of a spoon so that the mixture is well compacted.

Place in the fridge to chill for a minimum of 2 hours.

The peanut and honey energy bars should be covered and stored in the fridge until ready to eat and can be kept for up to a week.

Tips

  1. Heat the spoon in hot water or in the flame of a gas ring before measuring the honey so that it slides easily from the spoon.
  2. If you don't have a food processor the nuts can be chopped by hand, although this will take longer.
  3. If you don't have any of the ingredients try substituting something equivalent, such as a different type of nut or seeds.
