Quinoa and edamame bean salad

Quinoa and edamame bean salad is quick to prepare and makes use of only three store cupboard ingredients. Here I used a mixture of quinoa with bulgar wheat for added colour. It is high in protein and suitable for vegans too.

Ingredients:

  • 100g quinoa (or quinoa and bulgar wheat), cooked
  • 100g edamame beans, cooked
  • 5 pieces sun dried tomatoes, chopped

Simply combine the quinoa, beans and tomatoes. This salad can be stored in the fridge for around 3 days.

Try pairing with mushroom and leek flan or stuffed mushrooms.
