Tropical fruit energy snacks

Tropical fruit energy snacks are not only for when you are out hiking, they make a healthy alternative to biscuits and cake to enjoy at home. These no bake energy balls can be prepared quickly and and will keep in the fridge for about 4 to 5 days.

Ingredients
 
 

  • 1 banana
  • 2 tablespoon flax seeds
  • 4 tablespoon chopped dried papaya
  • 2 tablespoon chopped dried dates
  • 5 tablespoon oats
  • 1 dessertspoon honey
  • 2 tablespoon desiccated coconut

Instructions
 

  • Chop the papaya and dates into small pieces.
  • Mash the banana in large bowl.
  • Stir in the flax seeds.
  • Add the chopped papaya and chopped dates and mix.
  • Measure the oats and honey, add to the other ingredients and mix well.
  • Set aside for about 20 minutes to allow the ingredients to combine.
  • Take a spoonful of the mixture, form into a ball and roll in the coconut.
  • Repeat with the rest of the mixture.
  • Place in the fridge to chill for about a couple of hours and then your energy snacks will be ready to enjoy.
