Aubergines with honey (Berenjenas con miel)

Aubergines with honey are my version of the Spanish dish 'Berenjenas con miel'. Slices of aubergine are fried with honey to create this simple Mediterranean inspired dish. It is often served as a vegetable side dish, ración or tapa.

Ingredients
 
 

  • 6 slices aubergine
  • 1 teaspoon salt
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons honey

Instructions
 

  • Slice the aubergine into circles. Put on a plate, sprinkle with salt and leave for 30 minutes. Rinse and then pat dry with kitchen paper.
  • Drizzle a little honey over each side of the aubergine slices immediately before cooking.
  • Heat some olive oil in a large frying pan and cook for a few minutes either side until slightly golden.
  • Transfer to a serving plate to drain and then serve.
