Banana and prune energy bites

Banana and prune energy bites are a healthy snack and are easy to prepare. No scales are needed and no cooking is involved, simply mix the ingredients, leave to rest, shape then pop in the fridge to chill.

Ingredients
 
 

  • 5 tablespoon oats
  • 4 tablespoon prunes
  • 1 banana
  • 2 tablespoon chocolate chips
  • 2 tablespoon flax seeds
  • 1 teaspoon vanilla essence

Instructions
 

  • Chop the prunes into small pieces (approx 0.5cm to 1cm).
  • Place the oats and chopped prunes in a large bowl.
  • Mash the banana in a small bowl using a fork.
  • Add the mashed banana, flax seeds, chocolate chips and vanilla essence to the oats and prunes and mix.
  • Set aside for 15 to 20 minutes to allow the ingredients to adhere.
  • Take a teaspoon of the mixture, form into a ball and place on a plate.
  • Repeat with the remainder of the mixture.
  • Cover and place in the fridge for about a couple of hours and then your energy bites will be ready to enjoy.
