Beans in tomato sauce

Beans in tomato sauce is a simple budget friendly dish, full of cosy flavours which can be prepared in under half an hour. Serve as a filling for jacket potatoes, spooned onto toast or as a side dish.

Ingredients
 
 

  • ½ onion
  • 4 cloves garlic
  • ½ tablespoon olive oil
  • 1 pinch chilli
  • ½ teaspoon herbs
  • 400 grams chopped tomatoes 1 tin
  • 250 grams cannellini beans (cooked) drained and rinsed

Instructions
 

  • Finely chop the onion and garlic. Cook with the chilli for a few minutes in a little olive oil until soft.
  • Add the herbs and stir.
  • Add the chopped tomatoes and seasoning and simmer for about 5 minutes.
  • Remove from the heat and blend using a hand blender.
  • If you are using a can or jar of cooked beans, rinse, add to the tomato sauce and heat through.
    If you are using fresh or frozen beans, add to the tomato sauce and cook until the beans are tender.
