Beans in tomato sauce is a simple budget friendly dish which is full of cosy flavours and can be prepared in under half an hour. Serve as a filling for jacket potatoes, spooned onto toast or as a side dish to pair with vegetarian sausages or nut roast.

This is my way of preparing homemade British "baked" beans, although they are prepared on the stovetop and the beans are not actually baked. Even so, this is a simple version of this classic convenience food. Pop some bread in the toaster ready for your homemade beans on toast!
Some of the good things about this recipe are:
- The flavours come from natural foods, with no added colourings, flavourings, preservatives or other unnecessary ingredients.
- They do not contain added sugar and you can control how much salt you add.
- This recipe uses only common kitchen ingredients.
- It can be prepared and cooked in around 20 minutes.
- It is a budget friendly recipe.
Use tinned or jarred beans, or frozen beans. Add them to a few simple ingredients and you will have a tasty dish in no time.

- Beans - this recipe works well with white beans such as cannellini beans or white kidney beans. Ideally use cooked beans either from a tin or a jar. If you use frozen beans adjust the cooking time to make sure the beans are cooked.
- A tin of chopped tomatoes.
- Flavour boosters - onion, garlic, chilli and fresh or dried herbs such as oregano, basil and/or rosemary.

How to prepare
Chop the onion, garlic and chilli and cook. Add the tomatoes, herbs and seasoning and simmer.
Blend and then add the beans. Either heat through and serve, or pop in the fridge until later.




Serving suggestions
- Serve warm.
- Spoon over toast for homemade beans on toast for breakfast, brunch or other light bite.
- Use as a filling for jacket potatoes or jacket sweet potatoes.
- Pair with nut roasts, nut cutlets or apricot and nut sausages for a hearty vegetarian meal.
- Top with grated cheese such as Cheddar.
- Serve as part of a traditional English breakfast.
- Use as a base to create a thick soup or stew by adding root vegetables and serve with crusty bread.
Storage instructions
- Store in the fridge for up to 2 days. Reheat in a pan or using a microwave.
- Beans in tomato sauce can also be frozen. Defrost at room temperature or using a microwave.

Beans in tomato sauce
Ingredients
- ½ onion
- 4 cloves garlic
- ½ tablespoon olive oil
- 1 pinch chilli
- ½ teaspoon herbs
- 400 grams chopped tomatoes 1 tin
- 250 grams cannellini beans (cooked) drained and rinsed
Instructions
- Finely chop the onion and garlic. Cook with the chilli for a few minutes in a little olive oil until soft.
- Add the herbs and stir.
- Add the chopped tomatoes and seasoning and simmer for about 5 minutes.
- Remove from the heat and blend using a hand blender.
- If you are using a can or jar of cooked beans, rinse, add to the tomato sauce and heat through. If you are using fresh or frozen beans, add to the tomato sauce and cook until the beans are tender.
