Strawberry chia compote

Strawberry chia compote is a fruit compote perfect to use as a topping for cheesecakes, ice cream, cakes, pancakes and waffles. It can be made using either fresh or frozen strawberries and takes only minutes to prepare.

Ingredients
 
 

  • 300 grams strawberries
  • 40 grams sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons chia seeds

Instructions
 

  • Cut up the strawberries and place in a pan. Add the sugar.
  • Heat gently until the juices start to run and then simmer for about 5 minutes.
  • Remove from the heat and add the lemon juice.
  • Add the chia seeds and stir.
  • Leave for around 10 minutes and then transfer to a clean jar.

Notes

To serve
  • Use as a topping for desserts such as cheesecakes or ice cream.
  • Spread on toast, waffles or pancakes.
  • Use as a filling for cakes or gateaux.
  • Spoon onto scones, either with or without cream.
To store
  • Store in the fridge for up to a week.
  • If you wish to keep the compote for longer it can be frozen in small portions, such as in the holes of a silicone muffin case, and defrost as needed.
