Strawberry chia compote
Strawberry chia compote is a fruit compote perfect to use as a topping for cheesecakes, ice cream, cakes, pancakes and waffles. It can be made using either fresh or frozen strawberries and takes only minutes to prepare.

300 grams strawberries 40 grams sugar 1 tablespoon lemon juice 2 tablespoons chia seeds
Cut up the strawberries and place in a pan. Add the sugar.
Heat gently until the juices start to run and then simmer for about 5 minutes.
Remove from the heat and add the lemon juice.
Add the chia seeds and stir.
Leave for around 10 minutes and then transfer to a clean jar.
To serve
Use as a topping for desserts such as cheesecakes or ice cream.
Spread on toast, waffles or pancakes.
Use as a filling for cakes or gateaux.
Spoon onto scones, either with or without cream.
To store
Store in the fridge for up to a week.
If you wish to keep the compote for longer it can be frozen in small portions, such as in the holes of a silicone muffin case, and defrost as needed.
