Strawberry chia compote is a fruit compote which makes a perfect topping for cheesecakes, ice cream, cakes, pancakes and waffles. It can be made using either fresh or frozen strawberries and takes only minutes to prepare.
Serve it with ice cream such as stracciatella ice cream, add to white chocolate mousse or use in these individual iced Bakewell tarts.
It contains less sugar than traditional strawberry jam and will keep in the fridge for up to a week. For longer storage it can be frozen in small portions and defrosted as needed.
Unlike it's factory produced equivalents this strawberry compote is made using real ingredients so you know exactly what you are eating. And as you can use frozen strawberries it can be made all year round.

This small batch jam recipe will make one jar of compote.
Ingredients
- 300 grams strawberries - either fresh or frozen strawberries
- 40 grams sugar - either caster sugar or granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoons chia seeds - to add texture and help to thicken the compote.
How to prepare
Cut up the strawberries and place in a pan. Add the sugar.
Heat gently until the juices start to run and then simmer for about 5 minutes.
Remove from the heat and add the lemon juice.
Add the chia seeds and stir.
Leave for around 10 minutes and then transfer to a clean jar.
Uses for strawberry compote
- Use as a topping for desserts such as cheesecakes or ice cream.
- Spread on toast, waffles or pancakes.
- Use as a filling for cakes or gateaux.
- Spoon onto scones, either with or without cream.
Storage
- Store the compote in the fridge where it will keep for up to a week.
- This strawberry compote is not suitable for long storage. If you wish to keep the compote for longer it can be frozen in small portions, such as in a silicone muffin case, as defrosted as needed.
