Molten chocolate mug cake

Molten chocolate mug cake is a fudgy chocolate cake with a gooey centre which can be prepared and cooked in minutes. The ingredients for this single serving dessert are mixed in a mug and cooked in a microwave. All you need is a mug, a spoon and a few basic ingredients.

When you dig your spoon into this cake you will find a moist chocolate sponge with traces of molten chocolate. Enjoy it on its own or topped with whipped cream or ice cream.

It is a quick and easy dessert or snack perfect for when you want something sweet at short notice.

This microwave mug cake recipe is great for making one or two cakes. If you want to make a larger number then see the tips below for how to make several mug cakes.

A mug with a capacity of 200 ml is perfect for this recipe.

Ingredients

  • Flour
  • Baking powder
  • Caster sugar - you can adjust the amount of sugar to suit your taste.
  • Cocoa powder
  • Milk - I use full fat milk but you can use semi skimmed milk or non-dairy alternatives.
  • Olive oil
  • Vanilla extract
  • Chocolate - this will be placed in the centre of the cake mixture to produce the molten chocolate centre.

How to prepare

Measure the flour, baking powder, cocoa powder and sugar into the mug and mix well.

Add the vanilla extract, milk and olive oil and mix making sure that the dry ingredients are well mixed with the liquid ingredients.

Submerge the chocolate squares in the centre of the cake mixture. The mixture will be about half way up the mug.

Cook in the microwave at 750 Watts for 60 seconds. The cake will be ready when it is firm but still wet on the surface. It will continue to cook for a short time after taking it out of the microwave. Leave to rest for a couple of minutes before serving.

If you are making two or more mug cakes, microwave each one individually.

How to serve

Serve hot, either on its own or topped with whipped cream or ice cream.

Tips

  • Make sure you measure the ingredients accurately. A measuring scoop is more accurate than using a tablespoon.
  • Make sure the ingredients are mixed well to avoid pockets of powder in your finished mug cake.
  • If you want to make more than two molten chocolate mug cakes it can be quicker and easier to mix in a bowl. Multiply the ingredients by the the number of mug cakes you want to prepare, mix in a bowl and then transfer to the mugs.

Prepare ahead instructions

While this mug cake recipe is quick to prepare you can mix the dry ingredients in advance and then add the milk, oil and vanilla and pop in the microwave one at a time when you are ready.

Ingredients
 
 

  • 3 tablespoons flour
  • ¼ teaspoon baking powder
  • 1 tablespoon cocoa powder
  • 1½ tablespoons caster sugar
  • 3 tablespoons milk
  • 2 tablespoons olive oil
  • ¼ teaspoon vanilla extract
  • 2 squares chocolate

Instructions
 

  • Measure the flour, baking powder, cocoa powder and sugar into the mug and mix.
  • Add the milk, olive oil and vanilla extract and mix until there are no lumps or pockets of dry ingredients and the batter is smooth.
  • Place the chocolate squares into the centre of the cake mix making sure they are covered by the mixture.
  • Microwave at 750 Watts for 60 seconds and then check. The mug cake is ready when the surface is firm but still wet on the surface (the cake will continue to cook after removing it from the microwave). If the cake is not ready, return to the microwave for a further 10 seconds and check again.
  • Leave to rest for 2 minutes before serving.
