Mulled wine (spiced wine)

Mulled wine or spiced wine is red wine which has been heated gently and infused with warm spices and fruit.

It can be prepared in minutes and is perfect for sharing with family and friends over the festive period. Any type of red wine can be used, it doesn't have to be expensive, even a moderately priced bottle will give good results. This easy mulled wine recipe can be used to make whatever quantity of spiced wine you would like.

Why not take a look at other seasonal recipes to enjoy in the run up to Christmas and over the holiday period. It is never too early or too late to make your Christmas cake. It can be made several weeks ahead of time and fed with alcohol to keep it moist, or can even be made on Christmas Eve. Either way, homemade cake is always the best! Ingredients

  • One 75cl bottle of red wine
  • 1 orange
  • 1 tablespoon honey
  • 3 cm piece of cinnamon stick
  • 2 cloves
  • Garnish such as extra cinnamon sticks, star anise, fresh rosemary, etc

How to make mulled wine

Cut the orange into slices and place in a large saucepan. Add the wine, honey, cinnamon stick and cloves.

Preparing the mulled wine

Heat slowly until the wine just starts to simmer and then simmer gently (uncovered) for around 10 minutes or so to allow the flavours to mingle.

Remove a small amount and allow to cool sufficiently so that you can check the flavour. Add more spices and/or honey to suit your taste. It is better to start with a small amount and add more if needed.

Pour into a heat resistant bowl or jug. Serve warm in heat resistant glasses. The fruit and spices can be left in the wine (but the flavour will become more spicy) or the wine can be put through a sieve to remove any solids. Extra fruit can be added as a garnish if required.

You could try varying this recipe by swapping sugar or maple syrup for the honey, or by adding other spices such as star anise. If you wish to make the mulled wine more "boozy" then a small amount of gin, brandy or rum could also be added.
