
Watermelon and ginger cooler is a refreshing non-alcoholic summer drink which is made with only three ingredients and has no added sugar. It is ideal for entertaining in the garden and for taking on picnics. As it doesn't contain alcohol it can be enjoyed by anyone who wishes to have a grown up drink without alcohol and is suitable for children too. The quantities in the recipe below are sufficient to make around 600ml but it can easily be made in larger quantities.
Ingredients
- Approximately 500g watermelon (weighed with skin removed)
- 2 teaspoons fresh ginger
- Juice of 1 lime
- Garnish such as a slices of lime or lemon, fresh rosemary, fresh basil leaves, etc.

Equipment needed to make watermelon and ginger cooler
- Chopping board
- Sharp knife
- Grater (optional)
- Teaspoon
- Juicer
- Small bowl for the lime juice
- Hand blender
- Jug (suitable to use with the hand blender)

How to make watermelon and ginger cooler
Dice the watermelon (500g approximately) and remove the seeds.
Peel the fresh ginger and either grate or chop as finely as possible.
Cut the lime in half and squeeze the juice into a small bowl.
Place the chopped watermelon and ginger into the jug and blend. Add the lime juice and then blend again and then place in the fridge to chill.
Pour into a jug or glasses and add garnish of your choice.

Tips
- This recipe can easily be prepared in large quantities making it a great choice for when you have guests. It can be stored in the fridge for a couple of days if needed. Add fresh garnish before serving if the juice has been stored.
- The watermelon and ginger cooler is fairly thick but could be diluted with sparkling water to create a lighter bubbly version.
- Serve with garnish of your choice such as slices of lime or lemon and bunches of fresh herbs such as rosemary or basil.
