Watermelon and ginger cooler is a non-alcoholic fresh watermelon juice drink with the added flavours of fresh ginger and lime.

It is a refreshing summer drink which is made using only three ingredients and has no added sugar.
It is ideal for entertaining in the garden and for taking on picnics.

The quantities in this juice recipe are sufficient to make around 600ml but it can easily be adjusted to make the quantity you would like.
Ingredients
- Approximately 500 grams watermelon - weighed without the skin.
- 2 teaspoons fresh ginger
- Juice of 1 lime
- Garnish such as a slices of lime or lemon, fresh rosemary, fresh basil leaves, etc.

How to prepare
Peel and dice the watermelon and remove the seeds.
Peel the fresh ginger and either grate or chop as finely as possible.
Cut the lime in half and squeeze the juice into a small bowl.
Place the chopped watermelon and ginger into the jug and blend. Add the lime juice and then blend again and then place in the fridge to chill.
Pour into a jug or glasses and add garnish of your choice.

To serve
- Serve chilled.
- Add garnish such as a slice of lime or lemon and fresh herbs such as rosemary or basil.
Storage instructions
Store in the fridge for up to two days.
Tips
- If this juice drink is too thick it can be diluted with water to the thickness you would like.
- Dilute with sparkling water to create a lighter bubbly version.
