Mincemeat slices

Mincemeat slices have fruity Christmas mincemeat sandwiched between two layers of buttery oat crumble and are simple to make.

These festive cakes are a cross between mince pies and fruit crumble, baked in a tray and cut into portions.

They are a variation on date and oat slices and cranberry and apple crumble bars. They make a tasty Christmas treat and are also a good way to use up any leftover mincemeat.

You can make them using ready made mincemeat or homemade mincemeat using this easy mincemeat recipe.

For other recipes using mincemeat you may also like to bake some frangipane mince pies to share over Christmas or try these mincemeat pinwheels which are perfect for breakfast.

The quantities in this mincemeat slice recipe are sufficient for a 28 cm by 18 cm (11" by 7") tin.

Ingredients

  • 200 grams flour
  • 2 teaspoons baking powder
  • 150 grams butter - chilled
  • 120 grams oats - rolled oats
  • 100 grams granulated sugar
  • About 400 grams mincemeat - use fruit mincemeat which is used to make mince pies, either homemade or shop bought.

Prepare the crumble

Place the flour and baking powder in a bowl.

Cut the butter into small pieces and add to the flour. Rub the butter into the flour either by hand or using a food processor.

Add the oats and sugar and mix.

Chill until you are ready to assemble.

Assemble

Line a 28 cm by 18 cm (11" by 7") tin with non-stick baking parchment.

Spread half the crumble mixture over the base of the lined tin and pack using the back of a spoon or by pressing down with your hand.

Spread the mincemeat over the base.

Spoon the rest of the crumble mixture over the mincemeat making sure it is covers all the mincemeat. You do not need to compact the top layer of crumble.

Bake

Bake at 190℃, 375℉, gas mark 5 until slightly golden (about 20 to 30 minutes).

Leave to cool then remove from the tin and cut into squares or rectangles.

Storage instructions

  • Mincemeat crumble slices can be stored in an airtight container where they will stay fresh for several days.
  • They can also be frozen.

Make ahead instructions

  • The crumble mixture can be prepared in advance and stored in the fridge for a couple of days or can be frozen.
