Winter salad

Winter salad is fruity, crunchy and colourful. It is made using fresh seasonal produce, dried fruit and seeds and has a citrusy dressing.

If you are looking for new winter salad ideas this is definitely worth a try. Not only is it bursting with colour, it is packed with freshness and full of texture and as it can be prepared quickly and simply without needing to cook it makes a great alternative to traditional winter vegetables. This fruity winter salad recipe is sufficient for around three servings as a side dish.

If you are looking for other ideas for winter side dishes you may like to take a look at roast sprouts with pomegranate, Swiss chard with almonds and raisins or hasselback carrots with honey and rosemary, all of which are super tasty and quick and easy to make.

Ingredients

For the salad:

  • 3 cups green salad leaves such as rocket, lambs lettuce, spinach or any other leaves of your choice
  • 1 cup red cabbage - fresh, not frozen
  • Half an orange
  • Quarter of a pomegranate
  • 1 tablespoon golden raisins. I chose to use golden raisins for their lighter colour but darker raisins or sultanas could be used instead.
  • 1 teaspoon toasted sesame seeds. Toasted sesame seeds will add a nutty flavour to your salad, but other seeds such as sunflower seeds or pumpkin seeds could be substituted if you prefer

For the dressing:

  • 2 tablespoons white wine vinegar
  • Juice of half a lime

How to prepare

Start by preparing the dressing. Squeeze the juice of half a lime into a small bowl or glass. Add around 2 tablespoons white wine vinegar and mix.

Chop the red cabbage and place in a bowl. Add the salad leaves.

Add the dressing to the cabbage and salad leaves and toss.

Peel the orange. Separate the segments of half the orange and remove as much pith as possible. Cut into small pieces, remove any pips and add to the bowl with the other ingredients.

Separate the pomegranate arils and add most of them to the bowl, saving a few to sprinkle on top of the finished salad bowl.

Sprinkle the golden raisins, the remaining pomegranate arils and the sesame seeds over the top of the salad.

Your fruity winter salad is now ready to serve.
