Avocado chocolate mousse is a rich, creamy, healthy dessert made without cream, eggs or refined sugar. It is a lighter alternative to a traditional chocolate mousse, is dairy free, egg free and can be prepared in around 10 minutes.

It is perfect for when you want to prepare a dessert at short notice or for when you don't want to spend too much time in the kitchen. No baking or cooking required.

- Avocados - any type of avocado can be used such as Hass avocado, Fuerte avocado or Bacon avocado.
- Cocoa powder - minimum 70% cocoa content for a rich chocolaty flavour. Check there are no lumps before adding to the other mousse ingredients.
- Honey - you can adjust the amount of honey to suit your taste.
- Vanilla extract.

If you want to make a vegan avocado chocolate mousse you have the following options:
- Simply omit the honey (although this would result in a chocolate mousse with less sweetness).
- Use maple syrup in place of honey.
- Omit the honey and add icing sugar before blending.

Scoop out the insides of the avocados and place in a food processor.
Add the cocoa powder, honey and vanilla extract and and pulse until mixed to an even consistency.

Check for taste and add a little more honey or vanilla if needed.

Spoon into small glasses, bowls or espresso cups and chill before serving.
